Bellemain 12-Cup Nonstick Madeleine Pan: Review

I was lucky enough to receive a Bellemain 12-Cup Nonstick Madeleine Pan for free, in exchange for this review and my honest opinion. I was intrigued by this pan, because I had never heard of Madeleine cookies before, and I am definitely one for trying new things -- especially desserts! My baking skills are a work in progress, but I am trying to transition away from boxed mixes and into crafting up my own treats. Granted, I don't have a lot of spare time, but every once in awhile it is fun to bake to reduce stress...and to make the apartment smell amazing! The only type of pans I have for baking are cookie sheets and cupcake tins; moving into an apartment without a huge budget means that you get to put together a bunch of cooking supplies from relatives... you don't always have a specific pot or pan that you need for every recipe.

What is a Madeleine cookie?

It turns out that it is a traditional French dessert, with a sponge-cake base, and a special ridged back, which resembles a shell. This design comes from the mold or pan that you bake the cakes in. Traditionally, they are said to be made with nuts, and some newer varieties use lemon zest and/or coconut.   •  2 eggs
  • 1/2 cup all-purpose flour
  • 1 tablespoon lemon zest
  • 1/4 cup butter
  • 1/3 cup granulated sugar
  • 1/3 cup white sugar
  • 1/8 teaspoon salt
  • 3/4 teaspoon vanilla extract

Directions (from

  • Preheat oven to 375 degrees F (190 degrees C). Butter and flour 12 (3 inch) madeleine molds; set aside.

  • Melt butter and let cool to room temperature. 

  • In a small mixing bowl, beat eggs, vanilla and salt at high speed until light. 

  • Beating constantly, gradually add sugar; and continue beating at high speed until mixture is thick and pale and ribbons form in bowl when beaters are lifted, 5 to 10 minutes. 

  • Sift flour into egg mixture 1/3 at a time, gently folding after each addition. 

  • Add lemon zest and pour melted butter around edge of batter. Quickly but gently fold butter into batter. Spoon batter into molds; it will mound slightly above tops.

  • Bake 14 to 17 minutes, or until cakes are golden and the tops spring back when gently pressed with your fingertip. 

  • Use the tip of the knife to loosen madeleines from pan; invert onto rack. Immediately sprinkle warm cookies with granulated sugar. Madeleines are best eaten the day they're baked. Leftover madeleines are wonderful when dunked into coffee or tea. 

  • Variation: Chocolate Madeleines: Omit lemon zest. Increase sugar to 1/2 cup. Substitute 1/4 cup unsweetened cocoa powder for 2 tablespoons of the flour; sift into batter with flour.

My madeleines did not turn out as beautiful as those that I have seen in other pictures, so I couldn't get myself to take a picture of them. Definitely still a progress! I really enjoyed having this non-stick pan, for many reasons. The first is that it is not flimsy, and you can tell it is made from high-quality materials. I think that the depth of the molds is perfect. Non-stick anything is a life saver, especially when you have limited time. Even though my madeleines did not turn out to be the best (presentation wise), they were so easy to remove from the pan. I expected the filling to get stuck in the indentations within each shell, but I was surprised to find there was little to none left in the mold ..clean up was a breeze!

The molds in the Bellemain 12-Cup Nonstick Madeleine Pan review are very cute, and at the same time, fancy. These cookies would make a great addition to any shower or birthday party. I loved how evenly and quickly the pan heated up. I would love to try pouring other mixtures into this pan, to try multiple variations of madeleines. I think that you could easily build a whole bunch of things. Overall, I am extremely satisfied with the quality of this pan. It really stuck to its claim of being non-stick!
